A new report on the state of Polish gastronomy is ready! See how individual types of gastronomy businesses have coped and what their situation is now. The report covers the beginning of the pandemic to the end of June 2021!
As a developer of mobile software for the restaurant industry, we analyzed sales data from over a thousand restaurants to determine how their revenue, number and average value of bills, and the share of payment methods changed during the pandemic. We tracked key indicators to create a report on the condition of the Polish restaurant industry during the COVID-19 pandemic and answered the following questions:
- what changes in revenues in the catering industry have been forced by the pandemic,
- how consumer behavior was shaped,
- which types of catering businesses adapted relatively quickly to the new reality and coped best during the pandemic
- what was the situation of sushi and pizzerias compared to the rest of the market segments

Our study was conducted on a cross-sectional sample of over a thousand catering establishments from various segments, such as restaurants, pizzerias, sushi, etc., which continued to demonstrate sales activity in the POSbistro system from the beginning of 2019 until the report's closing date (end of June 2021) . The study included anonymized and aggregated data from POS sales system users.
